See if we can get a definitive list of games to own and games that you must play.
See how long it takes someone to say Halo 3.

Well, I'm a big time shooter fan, so I'll start the list with the must have gory games.

Gears of War - On top of great game mechanics and unique duck-and-cover game play, it's a beautiful* looking game. Plus, you get to use a chainsaw attached to a machine gun. What's not to love.

Th Orange Box - This is probably one of the best value games on the 360. It's actually 5 games in 1 convenient orange box (well, 4.5 games, since one of them is pretty short). In side it, you have Half Life 2, Half Life 2 Episode 1 (which I consider to be half a game because of it's short length) and HL 2 Episode 2. Half Life is one of the greatest shooters out their because of it's variety of weapons, it's physics engine, and physics puzzles. Using your gravity gun, you can turn anything that isn't nailed down into a weapon (and their happens to be a TON of saw blades in that game :D)

Also in the Orange box is Portal. This is one of the most unique games I've ever seen. Basically, you are given a gun that can open two portals on nearly any surface in the game, and walking through one will cause you to come out the other. The goal is to complete a labyrinth of puzzle rooms. For a puzzle game, it has a really deep story with a lot of dark humor. Some say this game is a bit short (I've seen videos of people beating it in 18 minutes!), but you can try to beat extra challenging versions of previous rooms at the end.

The 5th game in the Orange Box is Team Fortress 2. This is what gives the game it's replay potential. Basically, you can choose between 9 different classes on two different teams and duke it out in various game modes like capture the flag. You have you're basic stereotypic online multiplayer game classes, like the Soldier, the Heavy Weapons Guy, and Sniper. But then you have classes like the Spy, who can turn invisible, disguise himself as a member of the other team, and stab people in the back, and the Engineer, who can build turrets and teleporters.

And, in my opinion, the best first person shooter of all time, BioShock. BioShock is the "genetically enhanced" shooter. Basically, the entire game takes place in 1960 in an underwater city called Rapture, built by Andrew Ryan. He built the city as a place where scientists would not be bound by petty morality. One of the discoveries that took place in Rapture was the making of Plasmids, which are essentially new DNA spliced into the users existing DNA. These plasmids can make the user stronger, faster, smarter, and give them superhuman abilities, shooting lightning from their fingertips or throwing things with tier mind. In essence, the player must fight their way through what Rapture has become; a hellhole run by gun-slinging lunatics. Using all manner of improvised weaponry, invented items, and plasmids, you fight for your own survival.

The really stunning thing about this game is the artificial intelligence in the enemies and the amount of strategy you can put into defeating them. For instance, you set a person on fire with your Incinerate plasmid, and they jump into the nearest pool of water to put it out (there's a lot of leaking water in Rapture.) Then, you use your Electrobolt plasmid to shock them while they are in the water. While they are convulsing, you hack the nearest health station, so when they try to use it, they get poisoned.

That ended up a lot longer than I wanted it to be. Oh well. Here are some trailers for some of the games.:

*My definition of beautiful may be a bit more... twisted... than yours.
